HARVEST DETAILS
The Vineyard is south facing on sandy loam soil. GDC trellis system with 800 vines per acre or 2000 per hectare. Vines are 20 years old, all grapes are hand-picked. 2013 was a good year for Sparkling wines, as the ripening was slow and grapes were harvested with good acid structure
Pinot Noir: 26/10/10, 71°Oe, 14.4g/l
WINEMAKING DETAILS
Gentle pneumatic whole bunch pressing, yeast EC1118 bayanus, fermented at 16°c in stainless steel tanks. Bentonite fining. No MLF. DE Filter, sheet filter and membrane 0.45m before bottling. Dosage at 3 gpl.ta, lees aging for over 4 years for maximum autolysis of yeast.

GENERAL WINE DESCRIPTION
Literally translates as white from black. The Blanc De Noirs is a traditional bottle fermented English sparkling wine. Fine pin head bubbles, bright golden colour, rich and yeasty on the palate complemented by classic biscuit and brioche character typical of extended bottle maturation on the lees. Balanced with a hint of residual sugar, this wine exudes a complex marriage of freshness and richness, with all the character of classic sparkling wine.
