Tasting notes

A Light Red Pinot Noir with rich strawberry aromas and subtle farmyard notes, light delicate pinot character on the palate, and a long, fresh finish. Ideal as an aperitif, or with light meat dishes, served slightly chilled at the end of an English summer day! Winemaking Details: Skin fermentation at 28 degrees for 5 days.  10% of the grapes were cold soaked prior to fermentation (-3 degrees) for 2 days. Fermented with 71B yeast Cereviseae Yeast, followed by Malolactic Fermentation. 10% of the wine was aged in 3 year old American oak barrel. Cold stabilised in coldstore, filtration through Sheet filter and Crossflow, followed by 0.45 micron filtration into bottle.

The Harvest

The Vineyard is south facing on sandy loam soil. GDC trellis system with 800 vines per acre or 2000 per hectare. Most vines are 10-20 years old, all grapes are hand-picked. The 2019 harvest produced an above average crop with good ripeness levels and most importantly a good level of crisp acidity. The wine required minimum intervention in the winery and produced a wine of typical varietal character.

Wine with Food

At Three Choirs we don’t like telling you what to drink and eat as it’s such a personal thing and our tastes are all different. We could say that Bacchus goes very well with asparagus but if you don’t like asparagus you may feel you won’t like Bacchus which would be a great shame! To help get over this problem we have introduced new menus in our brasserie with lots of different flavours, so you can try for yourself and decide what you like, you are in control!

Room Availability

Our guest bedrooms are in high demand! The availability chart is up to date however as things do change, we suggest you keep checking.

Tour and lunch is available on Saturdays and Sundays only, again in high demand. Please call to make a booking for a tour & lunch experience as this cannot be booked online.

We will give expired vouchers a final extension until the end of 2021 to allow you to come and see us at some point this year.
